After watching the incredibly eye-opening documentary called Food Choices on Netflix, I am more convinced than ever that eating a primarily plant-based diet promotes better health and a healthier environment. Please watch this documentary if you have suffered from chronic illness or just want to learn more about leading a healthier lifestyle.
Cancer and chronic illness are on the rise. As someone who personally suffered from chronic illness throughout my childhood & young adulthood, I am determined to make healthier meals at home. My intent is to not only promote healthier lifestyle choices, but also to teach my children the importance of feeding the body nutrient-dense foods that nourish the body, mind, and overall well-being.
While I am pregnant, I am still eating organic (or grass-fed, whenever possible) meat and cheese in moderation. But my goal is to eventually phase into a primarily meatless and whole food, plant-based diet. If you are transitioning to a more plant-based diet, here are some tasty and satisfying meatless meal ideas.
With less carbs than lasagna but lots of “cheesy goodness”!
Fiber from the white beans and whole wheat pasta will help you feel satisfied with this tasty dish.
Pasta ribbons and meaty mushrooms are jazzed up with a dash of sherry, fresh parmesan cheese and a drizzle of truffle oil.
Oh, yum! Cheesy, rice-y goodness with a subtle kick of heat and flavor.
Got any meatless meals you want to share, perhaps even healthy vegan options? I’d love to hear from you!
